BLUE CHEESE & ROASTED PEPPER BAGELS

Ingredients
1 onion or poppy seed bagel, sliced in half
1/2 medium red pepper, cut in pieces, drizzled with olive oil and roasted or grilled
2 Rosenborg-Castello® Extra Creamy Blue Slices, halved
Salad leaves of your choice
Method
Toast or grill the halved bagel - cut side up, top with pepper pieces and the cheese slices, return to hot grill for a few minutes until cheese just starts to melt.
Serve with a salad.
