APPLE and GINGER CAKE with BLUE CHEESE FROSTING

125g (5oz) butter
225g (8oz) self-raising flour
2 tsp. ground ginger
100g (4oz) dark brown sugar
2 large eggs
250g (9oz) apples, peeled and diced
Frosting:
1 x 200g (7oz) pack Cream Cheese
1 x 150g pack Rosenborg-Castello® Blue Cheese
200g (7oz) sifted icing sugar
Method
1. Preheat oven to 180°C/350°F/Gas 4. Have ready a greased and base lined 9" cake tin.
2. Rub butter into flour, stir in sugar and ginger then add eggs and apples. Place in
prepared tin, smooth top and bake for 25-30 minutes until golden brown. Cool in tin
then remove.
3. Cream together the soft cheese and Rosenborg-CastelloŽ, then work in the sifted icing sugar. Use to frost top and sides of the cake.
Tip: Keep cake covered in refrigerator but allow to come back to room temperature to serve.
