BAKED PEACHES with ALMONDS and BLUE CHEESE

Ingredients

4 ripe peaches
1 x 125g pack Rosenborg-Castello® Mellow Blue Cheese
1/4 cup brown sugar
1/4 cup ground almonds
Little extra caster sugar for dredging

serves 4

Method

Preheat oven to 180ºC, (160ºC for fan assisted), 350ºF, Gas Mark 4.
1. Firstly cream together cheese with almonds and sugar.
2. Cut peaches in half and carefully remove stones, place in a shallow ovenproof dish.
3. Fill cavities left by stones with the cheese mixture pressing down gently and doming it slightly. Lightly scatter with a little further sugar and then bake for approx. 15 minutes until peaches just beginning to go golden at edges.
4. Serve warm with *crème fraiche.

*if Crème Fraiche is not readily available make your own by combining equal parts heavy whipping cream and sour cream
