BEER AND BLUE CHEESE SOUP

Ingredients

1 large sweet onion, chopped
1 clove garlic, chopped
2 strips bacon, chopped
1 tsp (5 mL) fresh thyme
2 cups (500 mL) dark beer
1 can (284 mL) condensed low sodium chicken broth
1 cup (250 mL) water
1 cup (250 mL) seasoned croutons
1 pkg (100 g) Rosenborg-Castello® Extra Creamy Blue Cheese slices, loosely broken

Method

In a medium saucepan cook bacon over medium heat until crisp. Add onions to bacon and cook until onions are soft and begin to caramelize. Add beer, chicken stock, water and garlic. Bring to boil and simmer for approximately 10 minutes. Pour into soup dishes and top with equal amounts of croutons and blue cheese. Or, alternatively carefully spoon into shot glasses and top with blue cheese slices.

Makes 4 soup servings
