Apple and Blackberry Crumble with Blue

Ingredients

3 large cooking apples – approx. 150 g in weight
½ cup 100-150 g blackberries
1 pack (175 g) Rosenborg-Castello® Noble Blue Cheese- crumbled
200 g caster sugar
¾ cup 170 g plain flour
5 tbsp. 75 g butter
1-2 tbsp. Demerara sugar (raw cane sugar)- optional

Method

Preheat oven to 180º/ 350ºF.
1. Peel, halve and slice the apples thickly and place in the base of an ovenproof dish with the blackberries, 100 g of the caster sugar and half of the crumbled Blue Cheese.
2. Rub the butter into the flour until it resembles coarse breadcrumbs, stir in the remaining caster sugar and crumbled Blue Cheese. Scatter the crumble mixture over the fruit in an even layer and if desired sprinkle with a light coating of Demerara sugar.
3. Bake for approx. 25 minutes until top is golden brown and fruit begins to bubble up through the crumble. Serve warm with vanilla ice cream if desired.
