Baked Chicken with a cheese centre, wrapped in bacon and served with a mushroom and blue sauce.

Ingredients

2 skinless chicken breast fillets
4-6 slices of side bacon or pancetta
1 pack (175g) Rosenborg-Castello® Noble Blue Cheese
50g butter
150g mushrooms
2-3 tbsp. single cream / crème fraiche

Method

Preheat oven to 180ºC/375ºF for fan assisted ovens/375ºF/ 1.Make a slit in the side of each chicken breast and then enlarge it inside to form a ‘pocket’ in the chicken, repeat with second breast.
2.Stuff each pocket with approx. one quarter of the Blue Cheese. Using a knife blade ‘stretch’ bacon slightly by running the blade up the slices, then use 2-3 to wrap around each chicken breast. Place on as baking tray and bake for 20 minutes.
3.Meanwhile wipe and slice the mushrooms, gently sauté in the butter and when just cooked, stir in the remaining Blue Cheese and a little cream to give a good consistency. Serve with the chicken.
